Cauliflower Breadsticks

A few months ago, I started having to go gluten free for medical reasons. At first it wasn’t too big of a deal, but slowly it got very boring!!! I found I needed to always be looking for new recipes to keep me on track, and not miserable at the same time haha. I had tried these breadsticks before, but they did NOT go over well. The first recipe did not taste good, they feel apart, and it was not something I enjoyed eating. So I tried again. And again. And again.

Finally I found one that is good!!! Give it a try!!


1 Head Cauliflower

2 Eggs (or 1/4 Cup Egg Whites)

1/2 Cup Mexican Cheese

1/ Cup Mozzarella Cheese

1 Tsp Italian Herb Seasoning (or more)

1/2 Tsp Salt

1/4 Tsp Pepper



Preheat oven to 3. Wash the cauliflower and cut it into small pieces. Place the pieces into a food processor and blend until its smooth, some bigger pieces are ok but most should be chopped up very thing to look like flower. Place the cauliflower into a 8×8 Baking Dish (or similar size) and bake in the oven for about 20 minutes. Once removed from the oven, let it sit until it is cool and crank up the oven to 450. Once the cauliflower is cooled off, you need to drain the liquid from it. I found this worked best by placing the cauliflower in the middle of a dish towel, and closing up the top, then squeezing. This got out about 1/2 cup to 1 cup of liquid so its a very important step! You can also place the cauliflower between two paper towels and push down to get the liquid out that way.

Once the liquid is out, place the cauliflower in a bowl, combine with 1/4 cup Mexican Cheese and 1/4 cup Mozzarella Cheese, the eggs, seasoning, and salt and pepper. Mix until it is all combined. Spray a baking dish with olive oils spray, and put the mixture on to bake. I pressed mine down to combine it and make sure it didn’t fall apart. Just make sure its not too thin! Mine was about 1/4 inch thick. (note, I tried using wax paper and it got stuck PLUS the wax paper burned so be careful if you try that). Bake for about 15 minutes. Remove and top with the remaining cheese (less or more or none, totally up to you!) and bake for another 2-3 minutes until the cheese is melted.

Allow it to fully cool before trying to cut and serve! These are great by themselves, or with some dipping sauce! Enjoy!!

Put the right ingredients into this recipe as well – love, hope, food, health, regular medical analyses, happy people around you, tolerance and no stress. Now, what are the first things you should do as an upcoming mother?


Get in Touch with the Gynecologist


Ideally, you should do it before even remaining pregnant. You should make sure that your body is healthy enough to take a pregnancy. If there is a problem, solve it right away, regardless of how insignificant it seems. Whether it comes to urinary infections, pelvic infections, candidiasis or other vaginal bacteria, polycystic ovary or blocked tubes, any small issue can become quite severe in the long run.


Look for Pregnancy Pillows


Pregnancy pillows are more useful when your belly is already large. Why would you buy one so early then? Easy! You need to get used to it. Plenty of women just cannot sleep on one side. They will have to get used to it. This is when pregnancy pillows kick in. Their main goal is to relieve pressure, but also to keep the back straight and prevent all kinds of painful sensations. There are plenty of models in commerce, so choose something with your needs in mind.


Change Your Diet


It is imperative to change your diet right away. If you used to rely on junk food, quit it today. Even if you had a healthy diet, you still need to make some changes. The secret stays in diversity. Come up with as many healthy foods as possible. Focus on fruits and vegetables, but do not overlook protein rich foods either. The more varied your diet is, the healthier and easier your pregnancy will be. Plus, your baby will thank you later.


Start Exercising


Start moving early if you want to stay fit during the pregnancy. You will still gain some weight, but then, it is highly indicated to exercise before pains kick in. If you start when you are already in the third trimester, physical activity will cause a lot of trouble. But if you do it early, adjusting will be piece of cake. Furthermore, physical activity reduces the risks of pregnancy loss.


With these ideas in mind, the pregnancy is not something to worry about, but something to be proud of. Congratulate yourself for it and make sure that you do your best for a quick delivery.

Try, Try, Try, AGAIN!

I Can’t Be Successful Working From Home……

I have heard this a million times, a million different ways, with a million reasons why. Many people have tried and failed and are scared to try again. They think they weren’t successful once, so they never will be. Or they think all companies are the same. But as we teach our children, “at first you don’t succeed, try, try, again”.  Some of the greatest people in history, are only known because they kept trying and did not let failure define them! Will you let it define you, or will you keep trying? I will always try as I want to pass that lesson on to my kids, keep trying!!!


Why are some people successful working from home, and some are not? It boils down to a few things!

  • Your Work Ethic- some people do really good with motivating themselves, while others need people to constantly remind them to stay on track, and give them tasks to do. If you can motivate yourself, then you are already on the right track!
  • Your “WHY”- this is huge! “Why” do you want to work from home and be successful? I challenge each of you to sit down, really think about this, and then write it down. Stick it where you can see it each day and so you will be reminded “WHY” you need this and want it! For me, it’s a better future for my kids! I want to be able to pay for them to do activities, go to college, take vacations, and yet still be home for them each day. They motivate me and push me to be better!
  • Your Determination- this is another huge factor! I have heard every excuse, and I’ve made them myself!!! What keeps you going is NOT making excuses, but finding reasons to make it work! I’ve moved 5 times in the past 5 years, across states, and lost contact with so many people. I don’t know many people where I live now, so I’ve used social media to build my business! Where there is a will, there is a way to be successful!
  • Your Schedule- when working from home, you have to set your own schedule! For some people, this is easy. But for others, when it comes time to work, they don’t. But this is the key, to be successful, you have to WORK! You can’t post one thing on facebook each day and expect that to make you $1,000 a month. If that really worked, every one would do it!!! Some people do have a large following and can be successful that way, but for most people, we have to build relationships, we have to share our love for our job, we have to spend hours talking to people and showing them the great opportunity! If you are spending 5 minutes a day and not finding success, its time to really work!! Figure out what time you can work each day. For me, I get up before the kids and then I also stay up usually an hour or two after them. That is my work time! I write down during the day what needs to be done during that time, and I don’t relax until its accomplished. To build a successful business though, you need to WORK!
  • Your creativity- you need to find new ways to get a customer base, to grow your network, to reach people! Be creative! Ask other small business owners how they do it, try new things, and get outside your bubble! Take post cards around to local businesses, host a “networking” dinner for other business people In your area, go to events and get a booth, give a prize for referrals….there are so many options!!!

I’ve been told I’m successful because I have a large network or a lot of friends or I got in at the start of the company. None of those are true haha. I’m successful because I put in the work! When I first started working from home, I was a senior in college and my kids were 1 and 2 ½. I got creative, I worked each day, I had success….and then I quit!!! That job was not for me, and it was a bad experience, but I didn’t let it get me down. I kept searching until I found the right job, and I tried again!!! For a few people, success comes easy, but for some, it takes years of hard work! But isn’t the hard work for a few years worth it to own your time???


Your success is determined by YOU! Do you have what it takes to keep going and never give up? I believe in you! After all, us Mom’s are some of the strongest people in the world. Keep going!!!!!




Monday Musings January 18th

I’m so thankful today is Monday!! I know, you are reading that and probably thinking either I had too much coffee, or not enough sleep….or both HAHA! The truth is I love Monday! I love the fresh start to the week, I love setting goals, and I love a new chance to rock the week! Especially after last week!! Last week was crazy for me! I got a nice surprise that my website was down and it took days of waiting “patiently” for it to be fixed. I have limited work time now thanks to my husband’s new schedule, so having no website on the day he was off, put a huge damper in my plans haha. But it worked out as that gave me time to get some other things off my to-do list!! Plus, I thought I was having company so I super cleaned my house. The company ended up not coming, but I have a nice clean house which is always a good way to start the week haha. And I got some projects done! Or in the process….I’m very excited about the playroom wall I’m working on! I’m not very crafty, so when a project comes together, I get very excited about it!

Easy BBQ Chicken

I am always on the hunt for a new recipe that is easy, healthy, affordable, and delicious! I love BBQ chicken, but how I normally make it (just baked in BBQ sauce) was not popular with my husband, so I began searching for new ideas and tweaked a few to fit my family! Here is how I now make my BBQ and everyone who tries it, loves it!



4 Chicken Breasts

1 Bottle BBQ Sauce

1 Sweet Onion

1 Cup Low Fat Cheddar Cheese




Marinate the chicken breasts in BBQ sauce (you can pour the sauce on them and cook, but I found that was too watery) in the fridge for a few hours. Once they are ready, put them in a 4×6 baking dish (bigger if you use more chicken) and cover with a small spoonful of the BBQ sauce on each. Not a lot, just a little or its too watery. Next, layer with a sliced onion. Last, add the shredded cheese evenly over the dish. Bake uncovered for 30 minutes at 400 degrees. Enjoy!! These go great with baked potatoes by the way!
