I love cauliflower and last year since having to go gluten free, I started cooking with it a lot more! Its amazing all the different ways you can use it and get some pretty delicious recipes too. Best part?? The kids don’t even realize they are eating a vegetable as it tastes so good. Great way to get extra veggies in as that is always a struggle for me! Try this Bacon Cauliflower Casserole, you will love it!
- 2 medium size heads of cauliflower
- 1 – 8oz light cream cheese
- 1/4 cup of butter
- 1¼ cups light shredded cheddar cheese
- 6 slices cooked turkey bacon
- Salt and Pepper to taste
Preheat the oven to 350. Chop up the cauliflower and cook until it is soft. While it cooks, prepare your bacon (I cook mine in the microwave for about 3 minutes). Next, chop up the bacon into small pieces. Once the cauliflower is soft, drain it. I then let it cool and use a blender to mass it. After mashing it, pour it back into the pot and add in the cream cheese and butter and stir until well combined. Pour into a baking dish and top with the cheese and bacon pieces. Cook for 25 minutes.
