Healthy Chocolate Brownie Muffins

Dessert is my favorite meal of the day. It always has been, and it always will be!! But that is also what caused me to spend most of my life a tad bit on the chunky side haha. After gaining over 60lbs with my first child, I realized I had to make some changes!! For awhile, I cut out all dessert, but that was just miserable and did not last long! Eventaully, I learned the key was NOT to cut out dessert, but find ways to make it healthier and have it in moderation.
This is one of my favorites! You can do them as muffins or brownies. I make a big batch and stick them in the freezer and then just warm them up for a treat. I also like to add a little whipped cream to mine. Delicious, healthy, and takes care of that chocolate craving!
INGREDIENTS:12003862_549722285178617_6039242230941085087_n
1 egg
1/4 cup brown sugar
1/3 cup unsweetened applesauce
1 teaspoon vanilla
2 Mashed Bananas
1 cup oat flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 cup cocoa powder
1/4 Cup Dark Chocolate Chips (optional)
DIRECTIONS:
Preheat oven to 350ºF and grease the muffin pan. Combine the egg, sugar, applesauce, and vanilla Blend the bananas and then add them to the mixture. Mix the dry ingredients and then combine them all and stir until well mixed. Add chocolate chips. Bake for about 20-25 minutes for regular muffins . Once they are cooled, you can also freeze these and then just heat them up when you want one!

Slow Cooker Chicken

Being a busy Mom can be tough!!! Especially at lunch/dinner time! See, I want to eat healthy, save money, and have quick meals. That’s not asking for too much right?!?! One of my favorite ways to reach all those goals is to utilize my Slow Cooker!! I’m a big fan of cooking soup in there, and freezing half of it for later meals.

12065860_10153287801124576_1231623165631488924_nI also use it every single week (yes I’m a creature of habit!) for my lunch! For a while I was buying the bags of grilled chicken that you just toss in the toaster oven, for my lunch each day. But those are expensive! One bag was around $5.99 and only lasted a few days. You know me, I had to find a better way!

Now I buy a whole chicken for usually around $5, cook that in the Slow Cooker, and eat it for lunch all week long! Here is the recipe I like, but you can change up the spices to fit your tastes.

INGREDIENTS:

1 Whole Chicken

1 Bag Baby Carrots

2 Cups Celery

1 Whole Onion, chopped

½ Cup Water

1 Tsp Salt

1 Tsp Pepper

1 Tbsp Basil

1 Tbsp Oregano

DIRECTIONS:

Pour the water in the bottom of the Slow Cooker. Next chop the onion and celery and add those. Pour in the carrots. Rinse the chicken and remove the giblets and place in the Slow Cooker. Rub the seasonings on top of the chicken. Cook on slow heat for 4-6 hrs.

And enjoy!!!!!

Bye Bye Belly Bloat

When it comes time to get yourself on track with your nutrition, many people ask where do they start?? I’m personally a big fan of a detox/clean eating plan to help launch you onto you healthy eating plan. Now I know what you are thinking, and nope this is not one of those weird things where you drink green juice for 3 days. How does it work?? You simply follow my meal plan! You can substitute as needed but the closer you follow the plan, the better!

For breakfast you can have things like oats, greek yogurt, egg whites, or a protein shake.

Lunch options are sweet potatoes, brown rice, any vegetables, and protein such as chicken, ground turkey, fish or tuna.

Afternoon snacks are items like hard boiled egg whites, almonds or a protein shake.

Dinner includes a meat of your choice, more veggies, and brown rice or sweet potato.

Morning Madness

Are mornings crazy in your house?? They are in mine! Do you struggle to find a healthy breakfast for your kids?? Three words: Banana Chocolate Muffins.

10154007_768616593171809_2105037955370285353_n

Mornings are crazy in my house. My husband works weird hours and normally by the time he gets home we have all been at the park for an hour. So breakfast for my 5, 3 and 1 year old falls all on me, and I’m not exactly a morning person. Plus when my baby wakes up, he wants me to hold him. And he wakes up usually around 6:30am so not much time for me to cook. I’m a very healthy eater myself so giving my kids high sugar foods for breakfast is just not something I do. And thus began the search for some good breakfast options for them as we all know kids are picky eaters.

This is my favorite!!! Banana Chocolate Chip Muffins!!! They use greek yogurt, oats, and bananas so the kids are getting good foods plus those chocolate chips help them to think they are eating a dessert. Mom approved, and loved by kids!! I bake a big batch once a month and put them in the freezer. That way during the crazy mornings, I can pop them in the microwave for 30 seconds and breakfast is served. Oh, and these all make a great evening snack when that chocolate craving comes on!

We All Scream For Ice Cream

As summer time approaches, many of us like to indulge in our favorite warm weather treat, Ice Cream!!! But regular ice cream can be high in fat and calories and put a stop to your weight loss goals. Instead, reach for a healthier yet still just as delicious, treat!!

Your best bet is going to be frozen yogurt, or a home made smoothie with fruit. Those are usually the lowest in calories and fat and they use real sugar, not substitutes or additives. In the calorie department, nonfat frozen yogurt is the best choice by far. Usually it ranges around 100 calories per servings with zero grams of fat. What makes it even better is it often has good for you probiotics in it which gives you live cultures to promote good gut health. For added protein, look for frozen yogurt that is made with greek yogurt.

Smoothies are a great choice as they are packed full of vitamins from the fruit. Throwing in some greek yogurt also gives you probitotics and extra protein. To up the protein, add a scopp of protein powder ( I like Try About Time Vanilla, use code TDF for a 25% off discount).

Here is my favorite smoothie recipe:

1/2 Cup Low Sugar Apple Juice

1 Cup Mixed Fruit (strawberries, mango, peaches, and bananas)

1 Cup Vanilla Greek Yogurt

1 Scoop Try About Time Vanilla Protein Powder

8-10 Ice Cubes (If your fruit is frozen, skip the ice)

Blend and Enjoy!!!
