Paleo Pumpkin Muffins

I love Fall! Especially since I live in an area where we actually have that season!! I spent 10 years living off the coast of Georgia and while it was very pretty there, we had limited seasons!!! Basically just summer, and then kinda cold haha. Now that I’m in an area where the leaves change colors, I appreciate it so much more!

Paleo Pumpkin Muffins

With kids, Fall brings a ton of fun activities around too! Picking apples, Halloween, Fall Festivals, Pumpkin Patches, and more!! My kids and I are big fans of Holiday’s. One of my favorite things about Fall is pumpkin!!! I love pumpkin flavored coffee, muffins, donuts etc and I make huge batches all Fall! This year though, my diet has changed a lot thanks to my autoimmune disease. I can’t have most the pumpkin treats I enjoy, but I was able to find a muffin recipe that I really love….and it’s healthy!

Best part, it’s easy to make and my kids don’t notice a difference. I make a huge batch of these and freeze them and they are great for me, and my kids!

paleo pumpkin muffins

Ingredients:

10 Eggs
1 Can Puree Pumpkin
1 Cup Applesauce
2/3 Cup Honey
2 Tsp Apple Cider Vinegar
4 TBSP Coconut Oil (melted)
2 Tsp Vanilla Extract
1 Cup Coconut Flour
2 TBSP Cinnamon
2 Tsp Pumpkin Pie Spice
2 Tsp Baking Soda
(I also like to throw in a dash of nutmeg, but that’s up to you!)

Directions:

Preheat the oven to 350. Combine all the wet ingredients in a bowl and mix on low until well combined. Add the dry ingredients and mix again until well combined. I let mine sit for a few minutes to thicken up. Spray coconut oil in your muffin tins. Fill ¾ of the way full with the mixture…it will be thick! Bake for approx. 25-30 minutes. Mine usually take 30 minutes as I like them more done. You can also freeze them and they make a great and easy heat up snack!!
