Running Out Of Time

Time is Precious!! I talk all the time about how busy I am, but that goes for pretty much every Mom out there!! As parents, we all struggle to do it all, have it all, and give our kids the best. But at the end of the day, its TOUGH!!!! I personally am a BIG fan of anything that saves me time as I can use those moments to be with my kids. One way I save time (and money!) is by cooking and freezing foods. I don’t know about you, but meal times at my house are crazy!!! Trying to cook elaborate meals with a toddler on my hip, a pre-schooler begging to go outside, and an almost 6 year old building forts does not make for much cook time. But I refuse to give my kids junk food as their health is very important to me. So what do I do??? Cook in bulk and freeze!!!

Finding time to cook in bulk can be tough, so often time I make extras of the meals we are having. For instance, I have muffins baking in the oven while pancakes are cooking on the stove. Or on a night we are having spaghetti, I make a HUGE batch of the sauce and use it also to make lasagna. You also have the option of just cooking everything on one day.

Here are some of the items I make and freeze.

 

Breakfast:

Muffins- I make 2-3 types of healthy muffins and usually 2 dozen of each and freeze them. It’s a lot easier to just double the portion size and make a ton at once than make them each week.

Pancakes- I make healthy pancakes from protein powder, eggs, bananas and oats. I make small sizes in a giant non stick skillet and freeze them

Smoothies- Frozen fruit and milk make for a great and quick breakfast! My kids favorite is banana and peanut butter. I always have frozen bananas in the freezer and its great for these

Lunch:

I do quick meals for Lunch such as PB crackers, PB & J, Cheese Quesadilla, Home Made Chicken Fingers, Smoothies, Grilled Cheese, etc

 

Dinner:

Spaghetti Sauce (I make 4 meals and freeze it)

Chicken Noodle Soup

Chili

Chicken Divan

Beef Stroganoff Sauce

Enchiladas

Baked Ziti

Lasagna

 

It takes a little preparation when you get started, but its well worth it to have an easy meal you can just pop in!
