Healthy Chocolate Brownie Muffins

Dessert is my favorite meal of the day. It always has been, and it always will be!! But that is also what caused me to spend most of my life a tad bit on the chunky side haha. After gaining over 60lbs with my first child, I realized I had to make some changes!! For awhile, I cut out all dessert, but that was just miserable and did not last long! Eventaully, I learned the key was NOT to cut out dessert, but find ways to make it healthier and have it in moderation.
This is one of my favorites! You can do them as muffins or brownies. I make a big batch and stick them in the freezer and then just warm them up for a treat. I also like to add a little whipped cream to mine. Delicious, healthy, and takes care of that chocolate craving!

1 egg
1/4 cup brown sugar
1/3 cup unsweetened applesauce
1 teaspoon vanilla
2 Mashed Bananas
1 cup oat flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 cup cocoa powder
1/4 Cup Dark Chocolate Chips (optional)
DIRECTIONS:
Preheat oven to 350ºF and grease the muffin pan. Combine the egg, sugar, applesauce, and vanilla Blend the bananas and then add them to the mixture. Mix the dry ingredients and then combine them all and stir until well mixed. Add chocolate chips. Bake for about 20-25 minutes for regular muffins . Once they are cooled, you can also freeze these and then just heat them up when you want one!

Morning Madness

Are mornings crazy in your house?? They are in mine! Do you struggle to find a healthy breakfast for your kids?? Three words: Banana Chocolate Muffins.

Mornings are crazy in my house. My husband works weird hours and normally by the time he gets home we have all been at the park for an hour. So breakfast for my 5, 3 and 1 year old falls all on me, and I’m not exactly a morning person. Plus when my baby wakes up, he wants me to hold him. And he wakes up usually around 6:30am so not much time for me to cook. I’m a very healthy eater myself so giving my kids high sugar foods for breakfast is just not something I do. And thus began the search for some good breakfast options for them as we all know kids are picky eaters.

This is my favorite!!! Banana Chocolate Chip Muffins!!! They use greek yogurt, oats, and bananas so the kids are getting good foods plus those chocolate chips help them to think they are eating a dessert. Mom approved, and loved by kids!! I bake a big batch once a month and put them in the freezer. That way during the crazy mornings, I can pop them in the microwave for 30 seconds and breakfast is served. Oh, and these all make a great evening snack when that chocolate craving comes on!

INGREDIENTS:

  1. 1 cup Vanilla Greek yogurt
  2. 2 ripe bananas
  3. ½ Cup Egg Whites
  4. 2 cups rolled oats (old fashioned or quick)
  5. 1/4 cup brown sugar
  6. 1 1/2 tsp. baking powder
  7. 1/2 tsp. baking soda
  8. 1/2 cup dark chocolate chips, mini or regular

DIRECTIONS:

  1. Preheat oven to 400F and spray a muffin pan with cooking spray or lining them with paper liners.
  2. Pour the bananas into a blender and mix until they are smooth. Combine all ingredients except chocolate chips in a mix bowl and stir until they are creamy. Add in chocolate chips.
  3. Pour batter into the muffin pan, filling each about 3/4s the way to the top.
  4. Bake for approx. 20 minutes or until they are firm
  5. I store mine in the freezer and cook in the microwave for 30 seconds.

The Truth About Desserts

I love sweets!! I always have and I always will, its a fact and I can’t change it. For a long time I tried and that did NOT work!! I ended up binge eating like crazy, gaining weight, and messing up my metabolism. So I learned to just accept that I love sweets and find healthy ways to have them in moderation. I’m always on the hunt for new recipes that curb my sweet tooth but keep me in my skinny jeans at the same time. Here is my new favorite!!!!!

Protein Cookie Dough Balls

Recipe:

1 Scoop Vanilla Protein Powder

2 Tbsp Peanut Butter

1 Tbsp Almond Milk Unsweetened

1 Tbsp Dark Chocolate Chips

Mix it all together until it is in a dough like consistency. Roll it into balls, you should get about 6. Put in the freezer for approx. 30 minutes. ENJOY!!!!!
